Who is EUEI?
EUEI is dedicated to harnessing the power of digital and virtual learning to create inclusive, engaging, and effective educational experiences. Since its founding, the institute has developed over 30 open online courses and worked with over 160 partners across Europe, reaching more than 20,000 students. With a core team of instructional designers, pedagogical consultants, and technical experts, EUEI specialises in creating interactive, learner-centred content that empowers students to reach their educational goals.
Through their focus on universal design for learning and human-centred design, EUEI ensures that all resources are accessible, engaging, and adaptable to a wide range of learning styles. The team’s commitment to continuous innovation makes them an ideal partner for the Food Eco-Culture Edu project, where their expertise will help shape a dynamic, digitally-enhanced curriculum and learning environment.
EUEI’s Role in the Project
In the Food Eco-Culture Edu project, EUEI will play a crucial role in developing the digital learning platforms, instructional materials, and multimedia content. With a focus on ensuring that the curriculum is accessible, inclusive, and engaging, EUEI will be responsible for creating the virtual
learning environment that supports the interdisciplinary modules and practical learning experiences.
EUEI’s expertise in designing interactive e-learning experiences will ensure that students have access to dynamic, engaging, and flexible learning resources. Their experience in working with diverse audiences, including in projects related to sustainability and entrepreneurship, will also ensure that the curriculum addresses the needs of a wide range of learners across Europe.

Canice Hamill, Instructional Designer: With over 20 years of experience in instructional design and digital pedagogy, Canice is an expert in creating innovative, interactive learning environments. His holistic approach to digital education ensures that learning experiences are both engaging and effective, making him an invaluable member of the team.

Kathy Kelly, Head of Diversity and Inclusion: With a background in law and human rights, Kathy brings a strong ethical framework to the project, ensuring that all educational materials are inclusive and socially responsible. Her role will be pivotal in ensuring that the curriculum is not only innovative but also ethically sound and culturally sensitive.

Catherine Neill, Project Manager: As an experienced project manager, Catherine is responsible for ensuring the smooth delivery of project plans and schedules. Her expertise in promoting and communicating educational content ensures that the project’s outcomes will be widely disseminated, helping to maximise the impact of the Food Eco-Culture Edu project across Europe.
